After buying a new shun knife you must clean that before using it. We suggest you to clean your knife with warm water.

Are Honing and Sharpening for shun knives same?
The simple answer is No.
HONING is a method that mostly goes with a regular knife edge maintenance process. We advise you to hone your knives after every 5 days to increase the lifetime of your knife’s blade.
Honing can maximize the total lifetime of your knife. If you hone your knife once in every 5 days, then sharpening intervals between twice will be extended. Regular honing is more effective than sharpening after a long period.
SHARPENING is not a regular process as honing. This process is only used for increasing the sharpness of your knife after the long term depending on your usage.
The more you use your knife, the closer will be the time of sharpening its edge. If your knife’s cutting edge got damaged after sharpening, then hone the knife manually.
